- First, boil 1.5 cups water in a pan. Add the beetroot and tomato pieces, cinnamon, bayleaf, black pepper, cloves and cardamom.
- Cover and cook till the beet and tomatoes are soft. Then remove the peels of tomatoes and remove the whole spices. Cool the vegetables in their water to room temperature.
- Now grind the vegetables in some water to a fine paste. Strain the paste.
- Heat the pan, add ghee. Then pop mustard seeds, cumin seeds. Then hing and the prepared paste and saute for 2 minutes. Add all the spices and 2 tablespoon water.
- When the water starts bubbling, add the prepared paste, salt, sugar and rest of the remaining red coloured cooking water.
- Adjust the consistency as per the thinness required. When it starts boiling, crush the Curry leaves with fingers and add to the shorba. This will give a beutiful taste. Remove from heat after boiling for 2 minutes. You may garnish with chopped coriander leaves.
- Serve delicious Shorba with Biryani or pulao or just have as a soup before your meals. Enjoy!
