Steps to make Bengali Black Pepper Chicken with Golmarich Chicken
- First, grind the black pepper seeds in a stone mill and make a powder. Homemade powder has a smell and taste. Alternatively, you can use packaged black pepper powder.
- Then marinate the chicken pieces with lime juice, turmeric powder, salt and black pepper powder. Mix the ingredients and leave for 30 minutes.
- Peel the potatoes and cut them in half. Marinate the potatoes with turmeric powder and salt. Apply a thin layer of material with your hands.
- Take a frying pan, heat the oil and fry the potatoes until golden, set aside. A gas flame is recommended.
- Saute black pepper seeds and curry leaves in the same oil until fragrant. Saute the tomatoes, shallots, ginger, garlic and red chilies until the oil appears.
- Then add the marinated chicken, season with salt and turmeric powder and cook until half cooked. You can cover fast cooking and save gas. If you close the lid, water will come out of the chicken after removing the cover, so continue cooking until the water has evaporated.
- Add the pickled potatoes, cook for a minute, then add water according to the amount of sauce you like. Cover with a lid and leave until the chicken and potatoes are completely cooked or tender. Remember to check back and check regularly.
- Mix chicken powder with black pepper with a little water, add to the sauce and stir. Also add some fresh curry leaves and green chilies; cover, leave for 5-10 minutes and turn off the gas.
- The tender chicken is ready to serve and can be served with rice, chapati or parathas.
