- 6 boneless, skinless chicken thighs

- A handful of fresh basil, chopped
- 32 oz angel hair paste
Instructions for making chicken thighs with basil pesto and mozzarella
- Preheat the oven to 350°F
- Pour marinara into a 13" x 9" baking dish.
- Place the chicken thighs in a bowl and sprinkle with salt and pepper.
- Spread the pesto on each chicken thigh
- Cover with tomatoes and sprinkle with salt and pepper
- Place the mozzarella slices on top of the tomatoes and sprinkle with Italian seasoning and grated Parmesan.
- Bake until the internal temperature of the chicken reaches at least 165 degrees Fahrenheit, 50 to 60 minutes.
- 10 minutes before they are done, start your water or Instant Pot for the noodles and cook according to package directions.
- Toss pasta with fresh basil.
- Remove the chicken from the oven (remember to turn it off).
- Pour the sauce over the pasta and serve with the chicken. cheer up!
- *Note** Do not skip the fresh basil or mozzarella. I recommend buying fresh tomatoes at your local farmers market. These items make the dish *pop*. If the mozzarella is too cooked, cover it with aluminum foil.
